Colcannon is a traditional Irish dish made from mashed potatoes mixed with cooked cabbage or kale and sometimes scallions. It is a comforting and nutritious dish often associated with celebrations like Halloween in Ireland. In some traditions, small objects like coins or rings are hidden within the Colcannon, and those who find them receive good luck or a future marriage.

Ingredients

4 large potatoes, peeled and cut into chunks

200g of cabbage or kale, chopped

4 scallions, finely chopped (optional)

100g of butter

1/2 cup of milk or cream

Salt and pepper to taste

Instructions

Cook the potatoes in a large pot with salted water until they are tender. Drain and set aside.

In another pot, cook the cabbage or kale in boiling water for about 5 minutes or until it is tender. Drain and set aside.

In a large pot, melt half of the butter and add the milk or cream.

When it's warm, add the potatoes and mash until you have a smooth mash.

Mix the cooked cabbage or kale and scallions into the mashed potatoes.

Season with salt and pepper to taste.

Serve the Colcannon in bowls, making a small well on top and adding a pat of butter to melt.

Tip

Colcannon is traditionally served with roast meat or sausages. For a variation, you can add chopped fried bacon or leeks to the dish for extra flavor.
